The source PDF is everything. A PDF that was created from a Word document, where the text is real text, not photos of text, converts back to Word cleanly. Tables usually come through, headings land in the right place, and you end up with something genuinely editable. A PDF that's a scan of a paper form converts badly unless you run OCR first, because as far as the converter is concerned it's just a picture. PDF-to-Excel is worth a specific note. It works well for straightforward tables where each cell has a value. It doesn't reconstruct pivot tables, charts, or complex conditional formatting, those don't survive the round trip.
